Well, the ingredients should be pretty obvious
Yup you guessed it…
Bread, bacon, lettuce and tomatillo!
Your options are endless in the bread department.
As for lettuce, I used Romain.
I’m sure your favorite bacon will do the trick as long as it is cooked till crisp.
And the tomatillos….you can slice them and put them in the sandwich raw, or you can roast them in your oven for a while. Just keep in mind that if you roast them, they will shrivel up and get small…..so, you’ll need to use extra tomatillo.
The only thing I really spent a little extra time on was dressing up my mayonnaise. My husband isn’t a fan of mayonnaise, so dressing it up was a necessity. Especially since the mayonnaise adds some nice moisture to the sandwich.
Spicy Mayo:
3 table spoons mayonnaise
1 and 1/2 teaspoons tapatio.
1 table spoon of lime
2-3 teaspoons of cilantro
These are the amounts I used. However, I would encourage you to play around with the proportions to suit your unique palate and taste. My husband really likes things spicy, so spreading some of this mayo on both the top and bottom of the sandwich was no big deal for him. For me, it was starting to get up there….it was just on the cusp. Any spicier and I would have deemed it “too spicy” That being said, it also depends largely on the quantity of spicy mayonnaise you choose to use. Next time around, I’ll probably keep the proportions the same but use some plain mayo on top….spicy on the bottom.
